Nori

Edible seaweed pressed into thin sheets, traditionally toasted before use. The cultivation method — racks suspended in shallow coastal water — has been refined in Japan for over three hundred years.
In the borderless kitchen, nori is a textural ingredient as much as a flavor one. A torn fragment over a plate of pasta does what crisp guanciale does — it adds a crackle and a salt the dish was waiting for.
