San Marzano Tomatoes

A plum tomato grown in the volcanic soil of the Agro Sarnese-Nocerino, southeast of Naples. Protected by a Denominazione di Origine Protetta (DOP), the genuine article carries that mark on the tin.
Sweeter and less acidic than a standard plum tomato, with thinner walls and almost no seeds. The work of selecting these tomatoes was done in the soil, decades ago — a cook's only job is not to ruin them.
