Teriyaki is a Japanese cooking method, not a sauce. The word combines teri (luster — the shine of a glossy glaze) and yaki (grilled or broiled). Traditionally, the technique means applying a soy-mirin-sake glaze repeatedly while grilling, building up layers of caramelized lacquer on a protein. The bottled sauce you're familiar with is the pre-made version of that glaze.
The authentic ratio is simpler than most recipes suggest.
The classic teriyaki sauce — base recipe
Makes approximately 200ml (¾ cup), enough for 4 servings
- 60ml (4 tablespoons) soy sauce
- 60ml (4 tablespoons) mirin
- 60ml (4 tablespoons) sake (or dry sherry as substitute)
- 1 tablespoon sugar (optional — intensifies caramelization)
Method:
Combine all ingredients in a small saucepan over medium heat. Bring to a simmer. Cook, stirring occasionally, until reduced by about a third — 5-8 minutes. The sauce is ready when it coats the back of a spoon and a trail stays visible when you draw your finger through it.
The sauce will thicken further as it cools — don't over-reduce on the stove or it will set like toffee at room temperature.
Use immediately, or cool and refrigerate for up to 1 month.
Why this ratio works
The 1:1:1 ratio (equal parts soy sauce : mirin : sake) is the traditional base. Each ingredient is doing a specific job:
Soy sauce — salt + glutamate + the dark color. The soy sauce is both the primary seasoning and the flavor base. Do not substitute with regular salt — the dish would be missing the glutamate and the fermented depth.
Mirin — sweetness + alcohol + color. Mirin is sweetened rice wine: the sugar caramelizes under heat (creating the lacquer), the alcohol deglazes and carries aroma, and the residual fermented character adds depth. Do not substitute with simple sugar + water — the alcohol and the fermented quality of mirin are structural, not decorative.
Sake — deglazing + depth + thinning. Sake's role is partly practical (it thins the sauce to a brushable consistency), partly flavor (it adds mild fermented depth), and partly technique (the alcohol helps the sauce adhere to the protein surface).
The optional sugar: Increases caramelization speed and produces a darker, more intensely lacquered finish. Traditional teriyaki often doesn't include it; restaurant versions usually do for visual effect.
Variations
Ginger-soy teriyaki
Add 1 tablespoon of finely grated fresh ginger to the sauce during cooking. Strain before using. The ginger adds a floral heat that cuts through the sweetness of the mirin. Good for salmon and chicken.
Citrus teriyaki (ponzu teriyaki)
Replace 2 tablespoons of the soy sauce with ponzu sauce. The citrus acidity from the ponzu brightens the glaze and makes it less sweet-heavy. Good for white fish, scallops, and lighter proteins.
Miso teriyaki
Add 1 tablespoon of white miso to the sauce off heat, after reducing. Whisk until fully incorporated. The miso adds glutamate depth and a slightly more complex fermented character. This version has more umami density than plain teriyaki and works particularly well on eggplant and chicken thighs.
Korean-style gochujang teriyaki
Add 1 tablespoon of gochujang to the base recipe. The result has heat and complexity from the fermented chili paste — moving the sauce from Japanese toward Korean without changing the technique. Good on short ribs, pork belly, or chicken.
How to use teriyaki sauce
On chicken (tori teriyaki)
The Japanese classic. Skin-on, bone-in chicken thighs are the right cut — the fat content holds up to the glaze's sweetness.
Method: Season chicken with salt. Sear skin-side down in a dry skillet until skin is golden and most of the fat has rendered, 8-10 minutes. Flip. Pour teriyaki sauce over the chicken. Cook 5-7 more minutes, basting frequently, until the sauce reduces and the chicken is cooked through.
The key: the sauce should be applied in the last 5-7 minutes of cooking only. If applied too early, the sugars burn before the chicken cooks through.
On salmon (sake teriyaki)
Salmon's fat content makes it ideal for teriyaki — the fat carries the glaze's flavor throughout the flesh, not just at the surface.
Method: Season salmon with salt. Sear in a very hot, lightly oiled skillet, skin side down, 3-4 minutes until skin is crispy. Flip. Add teriyaki sauce to the pan. Cook 2-3 minutes, spooning the sauce over the salmon as it reduces and caramelizes. Rest 1 minute before serving.
On eggplant (nasu teriyaki)
One of the best vegetarian applications. The eggplant absorbs the glaze deeply.
Method: Halve eggplants lengthwise. Score the cut surface. Brush with oil. Roast or grill until tender and charred. Brush liberally with teriyaki sauce. Return to high heat for 2-3 minutes until the glaze bubbles and caramelizes.
On tofu
Press firm tofu dry. Slice ½ inch thick. Pan-fry in neutral oil until golden on both sides. Add teriyaki sauce to the pan. The tofu will absorb the sauce while it reduces. Cook until the sauce glazes the tofu, 2-3 minutes.
Teriyaki in Japanese-Italian fusion
Teriyaki maps structurally to two Italian preparations:
Agrodolce — Italian sweet-sour glaze (vinegar + sugar + fruit). Both teriyaki and agrodolce are reductions applied to proteins that build a lacquered surface through caramelization. The flavor profiles are different (teriyaki is soy-forward; agrodolce is acid-forward), but the technique is identical.
Scaloppine al limone (veal with lemon-butter sauce) — both are quick pan sauces built while the protein rests. The pan deglazes with liquid (sake in teriyaki, white wine in limone), then reduces to coat.
Italian-Japanese crossover applications:
Teriyaki pasta: Thin the teriyaki sauce with 100ml chicken stock and 1 tablespoon pasta water. Toss with cooked pasta and sliced teriyaki chicken. Add a squeeze of lemon off heat. This sounds strange and tastes unexpectedly coherent — the soy-mirin balance makes the sauce work like a non-cream pasta sauce.
Teriyaki pizza bianca: Brush teriyaki sauce on a pizza base. Top with fresh mozzarella, thinly sliced chicken, and green onion. The sweet-salty glaze as a pizza sauce works because Italian pizza already uses sweet elements (caramelized onion, honey) under salty ones.
Teriyaki as a bruschetta glaze: Brush baguette slices with a thin coat of teriyaki sauce and toast. Use as bruschetta base. The teriyaki adds a savory sweetness that changes what toppings work — try ricotta + shredded teriyaki chicken + shiso.
Bottled teriyaki sauce vs homemade
Bottled teriyaki sauce typically includes: soy sauce, water, sugar, corn syrup, mirin (or sake), vinegar, and thickeners (xanthan gum, modified starch). The thickeners give bottled sauce its pourable, consistent viscosity.
Homemade teriyaki (the recipe above) is thicker and more concentrated when reduced. The flavor is more direct — each ingredient is readable separately, then they combine in the caramelized finish.
When to use bottled: Marinades (where you need a lot of liquid and the concentrated flavor would be too assertive) and everyday cooking where the time investment matters.
When to use homemade: Any glazing application where the sauce is reduced on the protein. The homemade version produces a significantly better lacquer because it doesn't have thickeners diluting the caramelization.
Storage
Teriyaki sauce keeps refrigerated for up to 1 month. The flavor mellows slightly over time (the sake's sharper edge softens) — some cooks prefer it 24 hours after making for this reason.
Freeze for up to 3 months. Defrost at room temperature; whisk to re-emulsify if separated.
