Chili Paste Science: Why Gochujang and Mexican Adobo Taste Like They Belong Together

Gochujang and Mexican adobo are built an ocean apart, from different chiles, by different processes — one fermented for months, the other made in an afternoon of toasting and blending. But both are solving the same problem: turning a raw pepper into a stable, layered flavor base with heat, sweetness, and depth a fresh chile can't provide on its own.

A raw chile is a blunt instrument. It delivers capsaicin — heat — and not much else. Green, sharp, sometimes a little bitter, and gone from the palate in seconds. No cuisine that depends seriously on chiles cooks with them raw and unprocessed. Every serious chile-based flavor base takes a raw pepper somewhere else: gochujang takes it through months of fermentation; Mexican adobo takes it through toasting, rehydration, and a blend of aromatics and acid. Neither tradition is willing to use a chile in its raw state as the foundation of a dish. Both have independently decided that a chile needs to be transformed before it can carry a cuisine.

That's the real parallel between gochujang and Mexican dried-chile adobo. Not that they taste alike — they don't, particularly — but that they are answers to the identical technical problem, arrived at from opposite sides of the planet.


What a raw chile is missing

Capsaicin, the compound responsible for chile heat, binds to the TRPV1 receptor on the tongue — the same receptor that detects actual heat, which is why chiles feel "hot" rather than simply flavorful. TRPV1 doesn't care what pepper the capsaicin came from. A Korean gochugaru flake and a Mexican chile de árbol are triggering the identical receptor with structurally near-identical molecules. Heat is heat, chemically, everywhere.

But heat alone is a flat, one-dimensional experience. It has no sweetness, no umami, no aromatic complexity — nothing for the rest of the palate to do. Every chile-forward cuisine has figured out that heat needs to be embedded in something richer, or the dish reads as merely painful rather than flavorful. Gochujang and Mexican adobo are two independently engineered solutions to that embedding problem.


How gochujang builds complexity: fermentation

Gochujang is gochugaru (Korean sun-dried red chile flakes) combined with glutinous rice, fermented soybean powder (from meju, the same base that becomes doenjang), and salt, left to ferment for months to years.

Three things happen during that fermentation:

  1. Amylase enzymes, present in the fermenting culture, break down the rice's starch into simple sugars. This is where gochujang's sweetness comes from — not added sugar, but starch converted in place. It's the same enzymatic action that makes miso sweet as it ferments.
  2. Proteases break down the soybean proteins into free amino acids, including glutamate — the umami compound. This is the same proteolysis that makes doenjang and miso savory, running in parallel inside the same jar as the starch conversion.
  3. Time and salt control which microorganisms dominate, favoring the ones that produce flavor rather than spoilage, while slowly deepening color and thickening texture.

The result is a paste where heat, sweetness, umami, and salt are no longer separate elements added to a dish — they're pre-integrated into one ingredient. A tablespoon of gochujang cooked into fat behaves the way tomato paste or miso does: it needs heat to bloom, and once bloomed, it carries the dish rather than sitting on top of it.


How Mexican adobo builds complexity: toasting and acid

Mexican dried-chile adobo — the base for barbacoa, many moles, and countless braises — takes a completely different route to a comparably complex result.

Dried chiles (guajillo, ancho, pasilla, chile de árbol, depending on the dish) are toasted briefly in a dry pan or over an open flame. This isn't decorative — toasting drives a Maillard reaction across the chile's exterior, generating pyrazines and other browning compounds that add roasted, nutty, faintly chocolatey notes the raw dried chile doesn't have. Toast too far and the chile turns bitter; the window is narrow, which is why the step is done by feel and smell rather than by timer.

The toasted chiles are then rehydrated in hot water or broth, which softens them enough to blend, and pureed with garlic, onion, and often vinegar. The vinegar matters more than it looks like it should: vinegar is itself a fermented product — acetic acid bacteria converting alcohol to acetic acid — so the acid brightening a Mexican adobo is, at a molecular level, arriving from the same broad category of microbial transformation that makes gochujang taste the way it does. The two traditions aren't as far apart as "fermented vs. not fermented" suggests; one just fermented the chile directly, and the other fermented the acid that gets added to it.

Some adobo and mole traditions layer in dried fruit (raisins, prunes) or char (charred tomato, charred onion) for additional sweetness and smoke — a Maillard- and caramelization-driven route to the same sweetness gochujang gets from enzymatic starch conversion.


The same destination, different roads

Line the two pastes up side by side and the differences look larger on paper than they function in a dish. Gochujang gets its heat from gochugaru and takes months to years to build; its sweetness comes from enzymatic starch conversion, its umami from fermented soybean (meju) proteolysis, and it carries almost no acid of its own — salt does the preserving instead. Mexican adobo gets its heat from guajillo, ancho, or chile de árbol and comes together in under an hour; its sweetness comes from toasting and char rather than fermentation, its savoriness from garlic and onion rather than soy, and it leans on vinegar for the acid gochujang doesn't bring.

What matters more than any single row of that comparison is the shape of the result: both are thick, spoonable, deeply colored pastes that carry heat, sweetness, and savoriness together, engineered to be cooked into fat at the start of a recipe rather than splashed on at the end. That structural similarity is why the two are more interchangeable in practice than the ingredient lists suggest.


Where the analogy actually breaks down

Gochujang's sweetness is intrinsic and stable — it was converted from starch months ago and isn't going anywhere. Mexican adobo's sweetness, when it comes from char or toasting, is more fragile and needs to be managed at the moment of cooking; over-toast the chiles and you get bitterness instead of sweetness, with no fermentation buffer to fall back on.

Adobo also tends to carry more acid by design — the vinegar is load-bearing in a way gochujang has no real equivalent for. If you substitute gochujang for adobo in a Mexican braise, expect to add a squeeze of lime or a splash of vinegar to compensate; the gochujang won't bring its own brightness the way adobo does.

And texturally, gochujang is smoother and more homogenous, being the product of long fermentation. Adobo often keeps a bit of the chile's fibrous body unless pushed hard through a blender or strainer — a rustic texture some cooks add back deliberately.


Where the two actually meet

This is the logic behind Seoul Meets Mexico City: gochujang and dried Mexican chiles aren't just similar in concept, they're close enough in finished behavior to braise together in the same pot.

The gochujang's fermented sweetness fills in exactly where the guajillo's toasted sweetness runs thin, and the guajillo's acid-forward brightness (from the adobo's vinegar) does work the gochujang alone can't.

Gochujang Pasta shows the same paste working outside a chile-forward dish entirely — proof that gochujang's role as a "flavor base you cook into fat" travels well beyond Korean or Mexican contexts.

Kimchi Quesadilla runs the parallel one step further, pairing gochugaru-fermented kimchi with a Mexican tortilla format — the lactic acid in the kimchi standing in for the acid a Mexican filling would usually get from salsa or pickled onion.


The actual lesson

Gochujang and Mexican adobo don't taste alike, and a cook who reaches for one expecting the other to show up unmodified will get a flatter, less balanced dish. But they were built to do the identical job in a kitchen: take a raw chile that offers only heat, and turn it into something that carries sweetness, umami, and acid alongside that heat — a complete flavor base rather than a single note.

Two culinary traditions on opposite sides of the world, with no historical contact until recently, independently concluded that a chile needs a fermentation step, a toasting step, or both, before it's ready to build a cuisine on. That's not coincidence. That's convergent food engineering — which is the entire premise Seoul Meets Mexico City is built on.
